Instead of going to the gym after work like a good girl, I decided to go home and cook up a storm. Why? Because I’d rather chop, mix and sautee than run and sweat…wouldn’t you? I baked a loaf of banana nut spelt vegan bread which I thought was pretty damn good for my first time. Toot toot! Haha jk. My parents thought it was good too so I’m not just tooting my own horn. I also made quinoa w/ swiss chard and garlic and a salad with chickpeas, olives, tomatoes, corn, and green and red onions. I can’t wait to eat it all tomorrow!!
