Instead of going to the gym after work like a good girl, I decided to go home and cook up a storm. Why? Because I’d rather chop, mix and sautee than run and sweat…wouldn’t you? I baked a loaf of banana nut spelt vegan bread which I thought was pretty damn good for my first time. Toot toot! Haha jk. My parents thought it was good too so I’m not just tooting my own horn. I also made quinoa w/ swiss chard and garlic and a salad with chickpeas, olives, tomatoes, corn, and green and red onions. I can’t wait to eat it all tomorrow!!

I’ve been wanting to make a quinoa dish since forever now and I finally did it tonight! I threw some quinoa in a rice cooker, sauteed some garlic, red onions, tomatoes, swiss chard and kale and mixed it all together. I can’t wait to eat it tomorrow. The next thing I’m dying to make is farro with roasted beets…stay tuned!

I baked my first bday cake today! Instead of paying 60 bucks for a vegan babycakes cake for my dad’s bday, I decided to bake my own. It’s a green tea spelt and wheat vegan cake with a red bean and taro filling covered with a failed vegan coconut green tea frosting which came out more like a ganache. Everyone thought it was pretty good and I liked it so it was a success!

My wonderful PA’s birthday was a few weeks ago and  we normally celebrate by going to lunch but we didn’t get to since she wasn’t here.  Being a responsible boss, I couldn’t let her birthday go unnoticed so I went and bought goodies at Babycakes NYC in downtown.  I’ve been meaning to try this place since I’m now a vegan and have been deprived of anything sweet, delicious and bread-y for the past month.  My PA is also a health-freak so it was the perfect excuse to indulge and not feel guilty about it. 

Everyone who knows me knows I hate LA. It’s like a Monet…from far away, it looks good: glamorous, historical and blah blah blah…but up-close and living/working in LA is a completely different story.  The traffic sucks, the roads suck, there’s no parking, it’s filthy with trash everywhere and it’s just a stressful environment.  Some parts of LA are nice but it’s very rare.  I know a lot of people don’t agree with me but we can agree to disagree.  I’m a suburbs kind of girl.  

Anyway…enough ranting about LA and back to Babycakes.  I rarely venture to downtown during the day and I was disgusted by the piss-smell (crinkle nose here) that hit me when I got out of the car and was on every street I walked down. The city smells like a urinal. Gag! Maybe the heat from the sun intensifies the smell because I never noticed it before at night.  It was very unpleasant and added to my LA resentment. I only had enough coins to park for 20 min so I knew I didn’t have time to waste.  Isn’t it ironic that when you’re pressed for time, that’s when things decide to go wrong? The girl that was helping me was clearly a new employee and she rung me up incorrectly which delayed the process and they changed their system so the register was faulty and wouldn’t print receipts. I remained patient and got to my car in time so no harm, no foul.

Boy am I glad that I didn’t cause a scene in the store because the desserts were HEAVENLY!! I got a box for the office which contained a carrot, red velvet and chocolate cupcake, agave brownies, a cinnamon donut and an oatmeal raisin cookie.  The other box had a spelt carrot and red velvet cupcake.  Everything was so good and didn’t fall far behind goodies that contain eggs and dairy.  My favorites were the carrot and red velvet cupcake and brownies.  The chocolate cupcake wasn’t anything to write home about.  Everyone who tried the desserts said they couldn’t even tell it was vegan. I’m so happy there are places like this that can soothe my sweet-loving soul.  For Babycakes, I’ll endure the piss-stank and street parking…

Pad thai w/ baked tofu and kelp noodles - I was craving pad thai like crazy and wanted to try out the kelp noodles I bought this past weekend. Rice noodles would’ve been better but the kelp noodles didn’t fall too far behind. A little different but good enough and I’ll probably use it every time I’m craving carbs.

What happened to Indian summers and leaves changing color? It’s only mid-September and it’s freezing outside!  Since winter decided to come early, I decided to embrace its presence by making a warm and hearty moroccan red and green lentil soup with lots of veggies. Can’t wait to eat it for lunch the next couple of days!

Ahi tuna with brown rice and veggies at my new favorite place - Bear Flag Fish in Newport. The freshest fish I’ve eaten in a long time for 11 bucks. Their poke, ceviche and fish tacos were also super fresh and delicious! I’m going back ASAP!
